Cranberry Sauce with Orange and Cinnamon

1.

Bring orange to a boil in a large saucepan with 1" of water. Remove from heat and drain, rinse under cold water, and return to saucepan.


2 minutes
2.

Add remaining ingredients and bring to a boil, stirring to dissolve sugar.


15 minutes
3.

Cook, stirring often, until cranberries burst and juices thicken.






Comments


Made a double batch (but only one orange). This time we removed the orange pieces after the sauce had chilled for ~24 hours. The sauce doesn't seem as jelled as previous attempts, but eating it is a much more pleasant experience (no picking out bits of orange peel).

After cooling to room temperature it sets to a thick gel. It is very sour and offers a wonderful counterpart to salty and savory dishes.

Made for Thanksgiving and it was very good. If you don't eat it all on the first day, remove the orange peels. The peels made the sauce bitter as it sat, but maybe we used the wrong type of orange or didn't blanch it long enough.
