Heat wok over high heat until beginning to smoke. Add green beans and salt, reduce heat to medium-low, and sear the beans, stirring occasionally, until scorched and becoming tender. Remove from wok.
Heat oil in wok over medium-high heat. Add pork and fry until browned.
Add garlic and chiles to wok and stir fry until briefly to incorporate.
Add the preserved vegetable an stir fry to incorporate.
Return beans to pan along with wine, soy sauce, sugar, and sesame oil. Increase heat to high and stir fry briefly to finish.
Made using 3/4 lb. pork, no preserved vegetable, doubled seasonings. The salt didn't adhere to the beans much at all, so they benefited from an extra douse of soy sauce when served. Most of the flavor is in the meat, which is nice but not particularly noteworthy. Would still make again though.
