Preheat oven to 375.F. Toss potato and garlic in oil on baking sheet. Roast, tossing halfway through, until garlic is golden brown and potato is tender.

Puree potatoes and garlic until smooth. Add tahini, salt, and lime, pulsing to incorporate. Slowly stream in the water to thin mixture to the consistency of hummus.
