Sabzi Polo سبزی پلو






Sabzi polo is a Persian herbed rice dish, served as a side to many dishes, especially fish.

Prepare Rice
1.

Wash the rice repeatedly in cold water until the water has mostly cleared. Bring a pot of water to a boil with the 1/4 c. salt. Drain rice and add to boiling water. Return to a boil and stir gently a few times to prevent clumping. Continue boiling without stirring until rice is soft around the edges but still firm in the center. Immediately drain rice a rinse under cold water to remove excess salt and halt cooking.


Prepare Tahdig

Mix one cup of the cooked rice with the yogurt. Gently toss the remaining rice with the herbs. Heat the oil in a pot, then add the yogurt mixture, spreading to cover the bottom. Layer the remaining rice on top of the bottom layer, shaping to form a roughly conical pile. Sprinkle the ground saffron over the rice.


Steam
45 minutes

Cover the pot's lid with a damkesh, place on pot, and cook over medium low heat until steam is rising and the bottom of the tahdig is golden.

Made this with labneh thinned slightly with water (and accidentally doubled cilantro and forgot garlic chives). This went surprisingly well for my first tahdig, and the bottom was a very nice gold color, but I'm not sure how I'm supposed to get it out without completely destroying it. Even without the garlic chives, this is very nice and I'm sure it would be even better if done correctly.
