A sweet Trini condiment, often served with doubles, but popular with other dishes throughout Trinidad and Tobago as well.

1.

Combine the tamarind pulp with hot water. Massage the pulp for a few minutes to soften.


2.

Grind together the garlic, culantro, and chile to form a paste.


3.

Add the chile paste to the tamarind mixture along with the sugar and salt. Mix to combine.
