A simple Indian dish of mushrooms. {Editor's note: What region of India is this/this version from?}
Heat oil in a deep pan. Saute chile and onions until onion is soft and translucent.
Add onion and salt, and continue cooking until mushrooms begin to brown. {Editor's note: Probably shouldn't add salt yet.}
Add garlic and fry briefly until aromatic.
Add the dry spices and fry briefly until aromatic.
Add the tomato paste and water, stirring to incorporate. Simmer until sauce is thickened slightly.
Made with mustard oil, one quarter of a poblano, and about 500g cremini mushrooms. This is very easy to make, and very good - we will be making this repeatedly.
