This is a simple Japanese tsukemono made from cucumber. There are many variations of this simple preparation, some including ginger or kombu, or including vinegar and sugar in the brine, or using koji instead of salt. This recipe is the simplest form, with variations left as exercises for the reader.

Rub the cucumber all over with the salt. Slice cucumbers and pack into a jar or crock. Let rest for several hours before use.
