A cold Turkish bean mezze. {Editor's note: Add regional variants such as Greek fassolia piaz (tuna), Cypriot fasulye piyaz (no onion or spices), and Syrian piyaz (no onions, add tahini).}

Combine the beans and vinegar in a bowl. Cover and let rest for one hour.

Prepare a dressing by mixing together the lemon juice, paprika, aleppo pepper, sumac, oil, salt, and pepper.


3.

Drain the vinegar from the beans, then gently toss with the vegetable and parsley. Drizzle dressing over top.


4.

Serve with egg and olive over top.
