1.

Fry cardamom, cloves, cinnamon, and bay in the ghee until sizzling.


5 minutes
2.

Add cashews and fry until beginning to brown.


8 minutes
3.

Add onion, green chili, and ginger garlic paste; fry until onion is slightly browned. Add mint and cilantro and fry briefly.


20 minutes
4.

Add rice, water, salt, and lime juice; cover and bring to a simmer over low heat. Cook until rice is done and all water is absorbed.


5 minutes

Remove from heat and let rest.

Made using 1/3 of a red bell pepper instead of green chiles; dried mint and cilantro; red onion; and 1/2 tsp. salt. This is still nice, but the flavors were too mild to hold up to the food this was served with.

Used salted butter, no chiles, 2 rice cup cups w/ 2 cups water in a rice cooker. Omitted lime juice and used fresh bay leaves. This dish definitely benefits from the lime juice, but wasn't bad without it. Definitely could use more salt.

Used regular butter, omitted chiles, and used 2 rice cup cups with 2 cups water in a rice cooker. Good flavor, but subtle.
