Mdardara is a Lebanese lentil and rice dish, typically served with fried onions, raw vegetables, and yogurt.
Toss together the onion and 2 Tbsp. salt. Set aside for 20 minutes to macerate.
Combine lentils and water in a large pot. Simmer until cooked, but still firm.
Squeeze the onions to remove as much liquid as possible. Heat 3 c. of the oil in a skillet and fry the onions until golden brown. Remove from oil and let drain.
Add the rice, baharat, and half of the fried onions to the lentils. Bring to a simmer, cover, and cook until the rice is tender. Add additional liquid as needed to prevent drying out.
Serve the mdardara warm with the remaining fried onions.
