1.

Roast or grill chiles to char the skin. Transfer to a closed container and let cool enough to handle, then peel off skin and remove seeds and stem. Slice into strips.

Melt butter in a large pan over medium heat. Add onion and cook until translucent.

Add chile strips, stirring to combine. Fry briefly.

Add crema, stirring to incorporate. Stir in cheese until melted.

Season with pepper, and adjust salt as needed. Reduce heat to low and let cook briefly to meld, stirring occasionally.
