Cheese Saganaki is a Greek appetizer traditionally fried in a heavy pan that gives the dish its name - the saganaki. It is typically made with a medium-firm yellow Greek cheese such as graviera, kefalograviera, or kefalotyri, with a Cypriot version favoring halloumi.
Pass the cheese through water to wet, then dredge in flour, shaking off excess.
Heat oil in a heavy pan. Once hot, fry cheese until well colored, then flip and continue cooking until golden on both sides.
Squeeze lemon over top cheese and serve.
