Canoas de Platano Maduro con Carne Molido

Also known as  'Plantain Boats with Picadillo'.

This Puerto Rican dish is both sweet and savory and is typically served with rice and beans.

1.

Heat oil to 350F in a large pan. Fry plantains, turning to cook evenly, until golden on all sides. Remove plantains to drain of oil and cool slightly.


2.

Place plantains on a baking sheet and carefully slit each one lengthwise to create a cavity, not quite from tip to tip. Take care not to cut too deeply, or to make the cut too long - there should be enough flesh at either end to keep it from splitting. Carefully fill the cavities with the carne molido, then top with cheese.


3.

Broil until cheese is melted and bubbling.
