This Bihari eggplant chokha from North Eastern India is usually used as a filling or accompaniment for litti, roti, or paratha.

1.

Roast eggplant over direct flame until skin is charred and flesh is tender and fully cooked. Remove from fire and let stand until cool enough to handle, then peel and chop the flesh, reserving juices.


2.

Thoroughly mix the eggplant and juices, onion, chiles, garlic, cilantro, and mustard oil in a medium bowl. Adjust salt and serve.
