Heat half of the oil in a deep pay over medium-high heat. Add pumpkin and salt and cook, stirring frequently, adding additional oil as needed to prevent too much sticking.

Stir in sugar and cinnamon. Continue cooking and stirring, slowly adding all the remaining oil, until mixture is silky, smooth, and caramelized.

Serve chilled or at room temperature.
