1.

Preheat oven to 350.F. Beat egg yolks, vanilla, and half the sugar until mixture is smooth, pale yellow, and doubled in volume.

In a separate clean bowl with clean beaters, beat the egg whites until not quite at the soft peak stage. Slowly add half of the remaining sugar and continue to beat until soft peaks form. Add the remaining sugar and continue beating to form stiff peaks.

Alternately fold the flour and egg white mixture into the yolk mixture until batter is smooth, thick, and fluffy.

Gently pour batter into a well buttered 9" cake pan. Smooth the top of the cake and bake until a cake tester inserted into the center comes out clean.

Remove from oven and let rest 5 minutes. Turn cake out onto a rack and let cool, reserving cake pan for later use.

Whisk together the condensed milk, evaporated milk, and cream .


7.

Return the cake to the pan and poke holes all over the top. Pour the milk mixture evenly over top of the cake. Cover and refrigerate for at least 8 hours.

Made this in a fluted bundt cake pan, which did not require the full baking time (closer to 35 minutes). Topped with whipped cream and ground cinnamon before serving. This is absolutely fantastic. Despite having no baking powder as some versions of this recipe does, the sponge was excellent and rose considerably. The sponge also held the milk well without becoming soggy and dissolving, even after four days.
