Coq à la Bière

A French chicken recipe, similar to coq au vin. This version, using beer rather than wine, tends to be more common in the norther regions of France.

1.

Preheat oven to 220.C. Place the chicken breast side down in a dutch oven. Add the oil and 1 Tbsp of the butter over top.

Roast, basing several times. Half way through cooking, flip the bird breast side up. Continue roasting until cooked through. Transfer chicken to a carving board breast-side down to rest.

Drain the fat from the roasting pan. Add the remaining butter to the pan along with the shallots. Sweat the shallots over low heat, stirring, until translucent.

Add the mushrooms and continue cooking briefly.

Add the brandy and deglaze, scraping the bottom of the pan. When almost dry, add the beer and sugar. Continue cooking until reduced by half.

Add the cream and reduce again to a light sauce.

Transfer the chicken to a serving dish, and pour sauce over top. Serve.
