1.

Heat the frying oil in a large, heavy pan over medium high heat. Fry the potatoes until beginning to brown, then remove from oil to drain. Pour oil from pan.

Add the olive oil to the empty pan and fry the chile and garlic over medium high heat until very aromatic.

Return the potatoes to the pan along with the salt, pepper, and cilantro. Fry, stirring, until golden brown. Adjust salt and serve with lemon juice over top.
