This dry potato dish works well as a side dish with rotis, chapatis or pooris.

{Editor's note: Update potato and onion amounts, using grams. Should be about 1 1/4 and 1/3 c. respectively once chopped.}

Heat the oil in a large pan. Add onion and saute until translucent.

Add the chiles and garlic. Continue cooking briefly to mellow garlic.

Add potatoes, turmeric, chile powder, coriander, cumin, salt, and water mixing thoroughly. Cover pan, adjust heat to a simmer, and cook until potatoes are almost tender.

Add spinach to pan and cook, stirring, until spinach has completely wilted.

Add coconut and garam masala, mixing to thoroughly incorporate. Remove from heat and serve.
