Boil Plantains
30 minutes
1.

Bring a large pot of water to a boil. Add the whole plantains and simmer partially covered until cooked.


Make Dough

Remove plantains from water and let cool. Peel and slice plantains, and place in a food processor along with the sugar. Process until smooth. If the dough seems too soft, add some flour to thicken. Refrigerate for 30 minutes to further firm, if desired.


Form Empanadas
3.

Form dough into 8 balls. Press each in a tortilla press to ~1/4" thickness. Place 1 Tbsp. of the beans in the center, fold disk in half, and press edges to tightly seal. Repeat with remaining empanadas.


Fry Empanadas
5 minutes
4.

Working in batches, deep fry emapanadas over medium heat until golden on all sides, rotating occasionally. Remove from oil and let drain.
