Diamond-shaped Bengali dal cakes. They are not usually eaten by themselves, but instead cooked in a curry.

1.

Grind the dal, 6 g salt, 12 g sugar, 10 g green chiles, and 120 g water to a coarse paste.


2.

Heat vegetable oil in a pan over low heat. Add coconut and ginger and fry briefly.


3.

Add cumin, turmeric, and xx hing, frying until the raw smell of the spices dissipates.


4.

Add ground dal mixture and peanuts to pan. Continue cooking, scraping bottom of pan continuously to prevent sticking, until mixture changes color and pulls together into a dough-like ball.


5.

Transfer mixture to a greased surface and shape into a diamond about 1" thick. Cut into 16 equal diamond-shaped dhokas.


6.

Heat vegetable in a heavy pan to 180.C. Fry dhokas on both sides until evenly browned. Remove from oil to drain.
