Fried ripe plantains are a popular dish nearly everywhere plantains can be found. In the Caribbean and Latin America, this dish is known as 'maduros', while in Nigeria it is known as 'dodo'.
Heat 1/2" oil in a heavy pan to 375.F.
Add plantains to oil and fry, turning occasionally, until softened and golden brown.
This took ~ 3 minutes per side to fry, using very ripe plantains. Very simple, very good.
