Dhokar Dalna are a Bengali vegan gram cake, typically served as a side dish for special occasions.

1.

Heat mustard oil until just smoking, Add dried chiles, bay leaves, cloves, cardamom, cinnamon, cumin seeds, and potato. Fry, stirring, until potato is golden-brown.

Add coconut and fry briefly.

Add ginger, ground cumin, turmeric, hing, and chile powder. Fry until raw smell of spices dissipates, adding water as necessary to prevent mixture from completely drying out.

Add salt and sugar and cook briefly, stirring to incorporate.

Add green chiles, tomato, and 400 g hot water. Bring to a boil, then gently add in each dhoka. Cook over medium heat to thicken gravy.

Finish with ghee, garam masala, and remaining green chiles.
