Combine all ingredients except breadcrumbs and oil in a bowl. Mix and knead mixture until it resembles this batter.
Spread the breadcrumbs into a flat dish. Working with 1/4 cup of the batter at a time, form it into an oblong or ball. Thoroughly roll in the breadcrumbs, and set aside. Repeat with remaining batter. Reserve remaining breadcrumbs when done.
Heat oil in a heavy, deep pan over medium heat. Working in batches, press the shaped batter into the remaining crumbs, flattening to 1/2-" thick patty, and flip to coat the other side. Brush off excess crumbs, and gently transfer patty into the hot oil.
Continue forming and adding patties, making sure not to overcrowd the oil. Fry each until browned on one side, 7-10 minutes, then flip and brown the other side for the same amount of time. As they finish, transfer the patties from the oil and let drain of excess oil. Continue until all patties are cooked.
