1.

Soak peanuts in water for 30 minutes to loosen any remaining dirt on the shells. Wash and drain thoroughly, repeating until water is clear.

Crack each peanut shell slightly. Place peanuts in a medium pot along with 6 cups water to submerge. Add salt and spices.


45 minutes
3.

Bring to a boil, cover, reduce heat, and simmer until peanuts are cooked but not soggy, 45 minutes to an hour, depending on desired consistency.


4.

Remove from heat and let cool to room temperature. Let brine overnight before serving cold.

Made this again, this time with only 16 oz. peanuts and red Sichuan peppercorns. I should have taken my advice and added a bit more salt. I'll also be adding more Sichuan peppercorns next time, as I can't taste them very distinctly. I boiled for the full 60 minutes, and I still think I'd prefer them to be more tender.

Made this a few days ago. Used 24oz. raw peanuts; and 1 tsp. black peppercorns with 2 tsp. red pepper flakes instead of Sichuan peppercorns. Boiled for the better part of an hour, but they are still just slightly crisp. The could do with a bit more salt, but are quite good. The anise and cinnamon gives them a surprisingly sweet flavor I was not expecting.
