Swordfish is very low-fat, so care should be taken to not over-cook.
Preheat oven to 400.F. Heat oil in a cast-iron skillet over medium-high heat. Season swordfish on both sides with salt and pepper.
Sear one side of the steak until browned.
Flip steak and transfer to oven to finish cooking. Roast until second side is browned and fish is just cooked through.
Made with 3 steaks totaling just over a pound. The steaks weren't of even thickness, so some parts were more cooked than others. I think they were a touch over cooked in general, but good nonetheless. Served a garlic sauce over top.
