Sift together all dry ingredients. In a separate container, mix wet ingredients. Form a well in dry ingredients and mix in wet ingredients to create a thick batter.
Melt a small amount butter in a large pan over medium heat. Once a drop of water vaporizes on contact, add 1/2 cup batter to the pan. Cook until bubbles begin to pop on the surface, then flip and cook until golden.
Used 2" of vanilla pod. Not enough. Mix as little as possible. It is okay to have lumps. Scant tsp table salt w/ salted butter.
Best if you pour straight from bowl instead of scooping batter out in order to achieve maximal floof.
