Combine all ingredients in a small sauce pan and and bring to a boil. Reduce heat to medium-low and simmer, uncovered, stirring frequently, until sugar is dissolved and sauce begins to thicken.

Turn off heat, cover, and let cool completely. Discard solids and store.






Comments


Made with brown sugar instead of palm, and half ginger and galangal. I didn't reduce it long enough, and it ended up being about 1.5 cups and a consistency like maple syrup when cool. Didn't remove spices before storing in a can. The flavor is very complex and quite good, though this is the only kecap manis I've ever had so I don't really have a baseline to compare it to.
