Soy Braised Tofu and Wood Ears

Soak the wood ears in warm water.

Trim the tough stem portions from the wood ears; dice the remaining sections.

Combine soy sauce, mirin, vinegar, sugar, peppercorns, bay, ginger, and garlic in a wide, shallow pan. Heat mixture to a boil and let boil, uncovered, until slightly reduced. Stir in Sriracha.

Add tofu to pan in a single layer. Scatter wood ears over top. Cover pan, reduced heat to a simmer, and braise tofu.

Turn off heat and let marinate in pan for 10 minutes.

Serve, drizzling sesame oil over and garnishing with scallions and sesame seeds. Serve hot, warm, or at room temperature.
