Mutabbal is often mistakenly called baba ganoush. They are distinct in several regards, specifically the inclusion of tahini in mutabbal, and pomegranate molasses, onion, and tomatoes in baba ganoush.
Grill or smoke the eggplant until charred on the outside and completely cooked inside.
Scoop the flesh of the eggplant out of the skin. Mix in the the walnuts, tomato, onion, garlic, parsley, lemon juice, olive oil, yogurt, salt, and pomegranate molasses, mashing to turn the eggplant in to a paste.
Drizzle with additional olive oil and sprinkle with sumac to serve.
