Also known as  'West African Peanut Soup'.

This West African stew uses a base of peanuts and tomatoes, along with meat (usually chicken or beef), and a mixture of vegetables, often including potatoes. It is often served with rice.

In a large pot, heat oil over low heat, then add the chicken and fry, stirring frequently, any browned beginning to brown. Remove meat from pan and set aside.

Blend the tomatoes, garlic, parsley, and half the onion.

Add half of the onions to the pot and fry briefly. Pour the tomato mixtureover, add paprika and white pepper, and simmer, stirring frequently, for 10 minutes, adding broth as needed to prevent burning.


15 minutes
4.

Add potatoes, carrots, peanuts, chile powder, and 3 cups of broth. Return to a simmer and cook until vegetables are tender.


5.

Add reserved meat, mixing to incorporate. Thin soup with additional broth if desired, adjust salt, and serve.

Made with 1lb. ground beef, only about 1 Tbsp. peanut oil, black pepper instead of white pepper, sweet potato, and about 1 1/2 tsp. salt. Also added about 2 cups of chopped kale along with potatoes, and two chopped small squash towards the end. Overall pretty good, but I think it could be better. I couldn't really taste the peanuts or sweet potato, so I think increasing the amount of peanuts and using sweet potato by itself may yield better results. It may have suffered because I used ground, raw peanuts instead of roasted peanuts.
