1.

Fry the bay, cumin seeds, and asafoetida with the oil in a large pan over medium-high heat until very fragrant.

Add grated ginger and fry briefly.

Add potatoes, tomatoes, turmeric, and salt, mixing to incorporate. Cook over low heat, stirring occasionally, until potatoes are partially cooked.

Add cabbage, peas, chile powder, and sugar, mixing to incorporate. Continue cooking until potatoes are cooked and cabbage is tender.


5.

Add garam masala and mix to incorporate. Remove from heat and serve.

Comments


Used galangal instead of ginger. Added an additional 1/2 tsp. salt which still wasn't enough. Pretty good but not great.
