Ingredients
- 4 Green Cayenne Chiles, seeds removed, chopped
- 6 Green Thai Chiles, chopped
- 2 Red Shallots, chopped
- 2 Tbsp. Lemongrass, trimmed, finely chopped
- 2 Tbsp. Galangal, grated
- 5 clove Garlic, chopped
- 2.5 tsp. Shrimp Paste
- 2 tsp. Lime Zest
- 1 tsp. Coriander Seed, ground
- 1 tsp. Cumin Seed, ground
- 1/4 tsp. Ground White Pepper
- 1/4 tsp. Ground Turmeric
- 2 Tbsp. Cilantro, roots and stems, chopped
- 1/4 c. Cilantro, leaves
- 3 Tbsp. Water, as needed
