1.

Toast cardamom, bay, anise, nutmeg, mace, cinnamon, cloves, and peppercorns in a dry pan until very fragrant. Remove from pan and let cool.


2.

Toast coriander seeds in dry pan until fragrant. Add to other cooling spices.


3.

Briefly toast fennel seeds and cumin until fragrant. Add to other cooling spices.


4.

Allow all spices too cool thoroughly.


5.

Finely grind all spices. Sieve powder to remove large chunks.
