Add 60 ml. dashi to a pot along with the soy sauce, sake, sugar, and vinegar. Bring to a boil and simmer for 3 minutes. Remove from heat and let cool.


2.

Layer the perilla in a crock. Pour brine over top, cover, and refrigerate for at least 3 days before using.
