Description
Swordfish, Xiphias gladius, is a large migratory predator found in the Atlantic, Indian, and Pacific oceans, as well as the Mediterranean. They have a long, flat bill protruding from their snout that they use to slash at prey. Swordfish can weigh up to 1,000 lbs. but commercially caught swordfish average 50 to 200 lbs. Swordfish is most commonly sold as fillets or steaks. Swordfish has thick, dense flesh with a low fat content and a mild flavor. The flesh should be off-white with reddish (not brown) areas.
