Peanut oil derived from raw peanuts has a mild, neutral flavor, but a much stronger flavor and aroma if produced from roasted peanuts. It is used in American, Chinese, Indian, African, and Southeast Asian cuisines as a general purpose cooking oil and, in the case of oil produced from roasted peanuts, as a flavoring. Unrefined peanut oil has a smoke point of 320°F/160°C, while refined peanut oil has a smoke point of 450°F/232°C. This makes the unrefined version better suited for low temperature cooking or dressing, while the refined version is well suited for deep frying.
