What is sold as 'shaoxing wine' in supermarkets is often actually liaojiu. Shaoxing wine is a catch-all term refering to one of several wines originating in the Shaoxing area. If a recipe just calls for 'Shaoxing wine', it probably means Jiafanjiu.
Shaoxing is very good at counteracting 'funk' (i.e. gaminess or fishiness), resulting in its common appearance in marinades.
