Description

The bean from the hopniss plant, similar in quality to common legumes. If a recipe calls simply for 'hopniss' it probably means the tuber instead of the rest of the plant. The tuber tastes like a cross between russet potato, yucca, and raw peanut. Each tuber is about the size of a quarter and takes about 2 years to mature. The texture is denser than potato, closer to yucca.
