Ratan Jot is sometimes called alkanet but it is not the same as the British Common Alkanet (A. officialis) or the Evergreen Alkanet (A. Sempevirens).
Description
The root of Alkanna tinctoria, used to make a natural red dye used in some Indian recipes. Ratan Jot is not soluble in water, so it must be heated in oil or alcohol to release its color.
