Tempeh




Description

Tempeh is a soy-based fermented food originating from Indonesia. It is a is a popular meat alternative. Once the soybeans have been fermented into tempeh, the mixture forms a solid mass that can be sliced or chopped into chunks. Young tempeh is covered in a fuzzy white mat, becoming progressively thicker and eventually turning grey once sporulation begins. The grey will eventually change to black as the tempeh matures. Any other colors on tempeh indicate spoilage. Some commercially available tempeh is pasteurized to halt the maturation process.
