Description

Dent corn is variety of corn that has a high starch and low sugar content, and is the variety widely used industrially as livestock feed, in industrial products, and processed foods. This variety of corn is not eaten fresh, but is instead harvested when fully mature and dry. The high starch content of this variety gives it more structure than sweet corn, and it is therefore the typical selection for use in making masa harina.
