Description

One of the primal cuts of beef, consisting of the belly of the cow, running from the plate primal back to the hindquarters. The muscle fibers in this cut are tough, and cuts are susceptible to overcooking. Cuts from this region are best suited for quick cooking at high temperatures, and benefit from marination and being cut against the grain when served.
