Beef Tenderloin




Description

A cut of beef from along the back of the cow, extending from the short loin primal through the sirloin primal, to the round. The tenderloin cut shares portions with T-bone and porterhouse steak cuts, making it mutually exclusive to those steaks on a single side of beef. This cut is very tender and should be cooked quickly at high heats.
