Beef Chuck




Description

One of the primal cuts of beef, from the forequarter of a cow. It consists of parts of the neck, shoulder blade, and upper arm, and produces tough but flavorful cuts of meat. Cuts from this section contain large amounts of connective tissue, which makes them best suited for braising or grinding. This primal is separated from the rib primal between the fifth and sixth ribs
