Description
Benincasa hispida is a large fruit that grows on a vine, similar to other melons. The immature have thick, white, sweet tasting flesh. When mature, the fruit develops a waxy coating, which helps the melon naturally delay spoilage. It is used in cuisines across Asia, from India to Vietnam. The Indian cultivars have a rougher texture, while southeast Asian cultivars have a smoother skin.
