Description

This cut of pork ribs is from the side of the pig, reaching down to the breastbone. Spare ribs are flatter and straighter than baby back ribs. One one of the ribs will have exposed marrow, where they were cut from the baby back ribs. At the other, the ribs will have a slab of meat along with some cartilage and gristle.
