Description

A Korean ingredient consisting of salted and fermented shrimp. It has a strong fishy smell and salty, umami flavor. Jeot-saeu shrimp, which are smaller and have thinner than normal shells, are traditionally used when making this ingredient. Once fermented, the shrimp are pale pink and white, in a translucent, milky brine.
