Description

Usually brewed from only soy, but some varieties include some wheat. Tamari is brewed with less water, resulting in a more concentrated umami flavor than other shoyu.

Tamari is the liquid that accumulates atop miso and is the original japanese branch of soy sauce from which the other shoyu are descendant.
