Mexican Chorizo




Description

This variety of chorizo is usually made of pork, but can also sometimes be made of beef. It is seasoned with chiles and vinegar, and sometimes briefly fermented, though never cured. Mexican chorizo also can contain flavorings like oregano, cumin, thyme, marjoram, bay, cinnamon, coriander, allspice, achiote, and cloves. It will usually contain garlic, and sometimes onion. Of all the Latin varieties of Chorizo, Mexican chorizo tends to be the spiciest.
